  • 3 eggs
  • 2 cups panko bread crumbs
  • 1 teaspoon cayenne pepper
  • 1 teaspoon smoked paprika

  • ½ teaspoon chili powder
  • 2 teaspoons hot sauce

Instructions:

  1. Slice the mozzarella block into sticks, about 3-4 inches long and ½ inch thick.
  2. Set up a dredging station with three shallow bowls: one with panko breadcrumbs, one with beaten eggs, and one with flour mixed with cayenne pepper, smoked paprika, garlic powder, and onion powder.
  3. Dip each mozzarella stick into the seasoned flour, coating it fully.
  4. Dip the floured stick into the beaten eggs, then coat it in the panko breadcrumbs.
  5. Repeat the egg and breadcrumb coating for a double layer.
  6. Place the coated mozzarella sticks on a parchment-lined baking sheet and freeze for 20 minutes.
  7. While the sticks are freezing, prepare the hot glaze by whisking melted butter, cayenne pepper, brown sugar, smoked paprika, garlic powder, chili powder, and hot sauce in a bowl until smooth. Set aside.
  8. Heat oil in a frying pan to 350°F (175°C).
  9. Fry the mozzarella sticks in batches for 2-3 minutes, turning occasionally, until golden brown and crispy.
  10. Remove the sticks from the oil and place them on a paper towel-lined plate to drain.
  11. Dip each mozzarella stick into the hot glaze while still warm. Let the excess drip off placing on a rack after dipping.

31. Hot Honey Pizza

Servings: 8

Ingredients:

  • 1 (13–16 ounce) tube refrigerated pizza dough
  • 1/2 cup pizza sauce
  • 2 cups shredded mozzarella cheese
  • 4 ounces sliced pepperoni
  • 1/2 cup whole milk ricotta cheese
  • Fresh basil leaves, for garnish
  • 2–3 tablespoons hot honey, for drizzling
  • 1 tablespoon olive oil (for the pan)

Instructions:

  1. Preheat the oven to 375°F. Lightly grease a 9×13-inch rectangular baking pan with olive oil.
  2. Press the refrigerated pizza dough evenly into the prepared pan, gently stretching it to the corners. If the dough springs back, allow it to rest for 5–10 minutes before continuing.
  3. For a thicker, fluffier crust, cover the dough and let it rise in the pan for 30–60 minutes before adding toppings.
  4. Spread the pizza sauce evenly over the dough, leaving a small border around the edges.
  5. Sprinkle the mozzarella cheese evenly over the sauce. Arrange the pepperoni slices across the top of the cheese.
  6. Bake for 17–20 minutes, or until the crust is golden brown, the cheese is melted, and the pepperoni edges begin to crisp.
  7. Remove the pizza from the oven and then add spoonfuls of ricotta cheese across the surface of the pizza. Scatter fresh basil leaves over the top.
  8. Finish with a generous drizzle of hot honey over the entire pizza before slicing and serving.

Popcorn & Snack Mixes

38. Caramel Popcorn

Servings: 8

Ingredients:

  • 8 cups popcorn, popped
  • 1 cup unsalted butter
  • 1 ½ cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon salt
  • ¾ teaspoon baking soda

Ingredients:

  1. Pop the popcorn using your preferred method, either on the stovetop or with an air popper. Transfer it to a large mixing bowl and remove any unpopped kernels.
  2. Line two 9×11-inch baking sheets with parchment paper and set them aside.
  3. Preheat the oven to 250°F (120°C).
  4. In a large heavy-bottomed saucepan over medium heat, melt the butter. Stir in the brown sugar until combined, then bring the mixture to a gentle boil. Let it boil for 4–5 minutes without stirring so the sugar dissolves completely and the caramel thickens.
  5. Remove the pan from the heat and stir in the vanilla extract, salt, and baking soda. The mixture will bubble up, so stir carefully until everything is well combined.
  6. Immediately pour the caramel over the popcorn. Using a wooden spoon or silicone spatula, gently toss until all of the popcorn is evenly coated.
  7. Divide the coated popcorn between the prepared baking sheets and spread it into an even layer.
  8. Bake for 1 hour, stirring every 15 minutes so the caramel coats the popcorn evenly and doesn’t burn.
  9. Remove the popcorn from the oven and allow it to cool completely on the baking sheets. The caramel will crisp up as it cools.
  10. Break the popcorn into bite-sized pieces and serve. Store any leftovers in an airtight container for up to one week.
